It all starts with the freshly ground buckwheat flour at the heart of each recipe. Every carefully selected ingredient is weighed by hand and the dough is carefully kneaded to obtain the crisp crumb texture, so typical of their biscuits. From cutting to baking, even packing, is by hand.
Buckwheat has great nutritional qualities and is packed with nutrients. Good for the enviroment too as it thrives in poor soil and does not need pesticides or fertilizers and the plants flowers attract lots of bees and other pollinators.
