The nuns of the San Clemente convent in Toledo are credited with inventing marzipan, by grinding almonds in a pestle (maza) with sugar to make a sweet bread (pan). Using ground almonds, rather than almond essence, produces a more delicately flavoured marzipan, which is then shaped into small figurines.
